Honey Yoghurt Cake

The long weekend turned out to be a total fizzer round these parts. The head cold that plagued me all week turned into a vicious sinus infection and some mysterious virus decided to take up residence, in my mouth. So incredibly painful was this, I ended up roaming the streets first thing this morning looking for an open medical centre. No chance on a public holiday of course. So 4 hours waiting in emergency at our local hospital, a few tests and a prescription later, I hope I am finally on the mend. Because I am really tired of being a sickie.

There were small highlights over the weekend however. Having Scott home for 3 days was one of them. Seeing the boys sharing quality one-on-one time with their Dada was another. And my decision to do a spot of baking during one of the 'numb-on-a-mixture-of-sudafed-and-panadol-high-moments' I experienced on Saturday. Once again, I took this one straight out of the trusty Women's Weekly COOK book and it's a simple beauty. Such rich texture and subtle flavour. It went down a treat with a cheeky 3 year old, who asked if he could "eat some of the flour off the top", as I was snapping the photos. That's some sweeeet flour, my little man.

Honey Yoghurt Cake

200g unsalted butter, chopped
3/4 cup (210g) yoghurt 
(I used Ski D'lite Vanilla Creme)
1/2 cup (175g) honey
1 teaspoon ground cinnamon
 (I used Allspice in place of cinnamon, as I discovered at the last minute my cinnamon was out of date)
2 eggs
1/4 cup (55g) caster sugar
1 3/4 cups (260g) self-raising flour
1/2 teaspoon baking powder
1 tablespoon icing sugar

Preheat oven to moderate (180/160 degrees). Grease 15cm x 25cm loaf pan; line base with baking paper
Beat butter, yoghurt, honey and half the cinnamon in small bowl with electric mixer until just combined and smooth. Transfer mixture to large bowl
Beat eggs and caster sugar in small bowl with electric mixer until thick and creamy
Stir egg mixture into yoghurt mixture; fold in sifted flour and baking powder
Spread mixture into pan
Bake, uncovered, about 45 minutes
Stand cake 10 minutes then turn onto wire rack; turn cake top-side up to cool
Dust with sifted icing sugar and remaining cinnamon to serve

  1. Sorry to hear you have been under the weather Julie...the change of seasons has been playing havoc on our health as well.

    I do so enjoy seeing the recipes you post...the ones I have tried so far have not disappointed and I don't think this one will either :)

  2. Yum! That cake looks amazing. I haven't done any baking forever. I really must make a point of doing some this week. It's fun and let;s face it, delicious (if it makes it into the oven).

    I'm glad I'm not the only one who had a fizzer of a long weekend!

    I wish there was an exchange and refund system in place for long weekends - I'd give you one.

  6. The boys sure look like THEY enjoyed the cake! It looks yummy to me too ... Hope you feel better soon. I HATE those colds that make you sick enough to be in a fog, but not sick enough to be in bed. Hang in there :)

  7. Oh I hope you're feeling better. You poor, poor thing. My weekend was a fizzer too, it involved a frantic call to my doctor on the public holiday only to be called stupid.

    Oh well, it's a fresh week, let's hope it's imprroves for both of us!
