I had an absolute shocker in the kitchen yesterday. Don't mind admitting. Thought I'd try my hand at a seemingly simple recipe for nutty meringues... and well, they turned out to be more of a nutty-cakey-biscuity ball. The flavour is still yummy, they just look and feel nothing like they're supposed to. Scott thinks I shouldn't have said anything about what they were meant to be and pass them off as is. Hmm, I'm actually just perplexed as to how I could go so wrong. Over-beating of the egg whites is possible. But these do prove that anything looks reasonable with chocolate slapped on top.
Nutty Meringue Sticks(?!)
3 egg whites
3/4 cup (165g) caster sugar
1 1/4 cups (120g) hazelnut meal
1 1/2 cups (185g) almond meal
1/4 cup (35g) plain flour
100g dark eating chocolate
Preheat oven to 160 degrees (140 for fan-forced)
Grease oven trays, line with baking paper
Beat egg whites in small bowl with electric mixer until foamy
Gradually beat in sugar, one tablespoon at a time, until dissolved between additions
Transfer mixture to large bowl
Fold in nut meals and sifted flour
**At this point it all went horribly wrong for me... mixture wouldn't pipe... so the balls were born!**
Spoon mixture into large piping bag fitted with 1.5cm plain tube
Pipe 8cm sticks onto trays
Bake about 15 minutes
Cool on trays 5 minutes
Drizzle sticks with melted chocolate
Oh I can so relate! I could do a whole blg on my cooking stuff ups. But often they look terrible but still taste yum!
